Maple syrup via Wikipedia. Maple Syrup is not raw…as it has been heated down into a syrup. I do use it…the maple syrup that comes from Canada, which is 80% of the maple syrup on the market. Canadian maple syrup only needs to be 60% maple syrup. USA syrup is over 90-100% maple syrup. The taste is different as day and night. What is the other 40%…the label never says?
